Recently I was contacted on behalf of British Lion Eggs. To one lucky reader they are offering a copy of Michel Roux’s Eggs (more than just boiled egg recipes), as well as a selection of egg cooking goodies.
As you may well know, I am not a fan of eggs on their own, but I do love a post-run breakfast of pancakes or French Toast.
This weekend I made French toast using a mini pannetone, and it was gorgeous. I sliced the pannetone and left it out overnight so it would firm up a bit (as stale bread is meant to be better). Then when I got back from my run, I cracked an egg into a bowl, added a little almond extract and a splash of milk, and then dipped the slices of bread in the mixture.
I heated some coconut oil in a pan (just a tsp), and cooked the slices two at a time. Sometimes I have it with fresh fruit, or a cooked apple, but this week I picked up some cheap blueberries, so I cooked them in a pan with a few tbs of water, plus a sprinkling of coconut sugar, until they went all jammy.
Once the French toast was cooked I topped each slice with a little maple butter (my last) and the poured on the sauce.
I only wish that there were more mini pannetones still in the shops as they are the perfect size!

My ultimate is perfectly cooked eggs benedict … the poached eggs need to have firm whites yet perfectly runny yolks and no water pockets, and not too much ham and the english muffin cannot be too thick. then the (freshly made) hollandaise sauce needs to have a distinct lemon tang and I’m in heaven. And last and most importantly – made by someone else 😉
This may be one of my favourite giveaway themes EVER. Eggs are probably my favourite food in recent times, and if I had to pick… it would be super buttery, bright yellow, slightly runny, scrambled. Plenty of black pepper on top 😉
PS I’ve got a feeling Caffe Nero’s sell mini panettones all year round… totally checking next time I’m in there!
Perfect eggs? Poached on sourdough toast with avocado, black pepper and chilli flakes. Gotta still have a runny yolk or it’s just not a good egg!
Definitely poached eggs, with smoked salmon on a wholemeal muffin. If I could eat that everyday I would be very happy indeed…
As for sweet, I absolutely love portugese custard tarts – fresh and vibrant eggs are a must in making them!

I love my eggs any which way to be honest, boiled, scrambled, fried you name it but if there making cakes or cookies then that’s probsbly top of the list!

Poached eggs every single time. I would eat them for every single meal if my job didn’t require me to make other meals.
Runny yolks are the best and my favourite way to eat eggs.
I love omelettes filled with goat’s cheese and mushrooms. I eat a lot less meat than I once used to so eggs feature much more higher in my meals nowadays. Dan was actually looking for an egg ‘shaper’ the other day as his eggs always end up massive and run all over the pan when he attempts to cook any!
Much more higher?! Haha! That makes no sense!
