Decorating the Christmas cakes!

Hey all

I had a lot of fun yesterday (and Friday) decorating the Christmas cakes. I used the pink whisk for some of the how-to’s, so it is well worth a look if you wanted to create something similar. Lots of you voted for the polar bear, so I decided to go for it even though it looked tricky.

It did take a while (and his ears kept falling off at first) but I am really pleased with how he looks! Too pretty to eat! I had fun with the edible glitter too, but you had to dampen the icing for it to stick and that had not dried when I took the photos.

I also did one with gingerbread men and candy canes.

Although I made the mistake of using the gel icing for the eyes- it is super sticky and does not dry. The holly was tricky as you were meant to have cutters but I didn’t so had to make do with a knife- easier said than done!

The boxes are so good, as they come with the boards too. Normally I either give them away in tins that I want back, or have to wrap them carefully in a lot of silver foil and things. Ā I will have to remember that for next year. šŸ™‚

I hope you are all busy getting ready for Christmas too- I have to decide one something for Christmas day as we will be going to Andy’s parents but I will make something for myself that they can heat up in the microwave- am thinking some kind of lentil shepherds pie with sweet potato mash on top? I have seen some lovely nut roast recipes but as I don’t really like all the potatoes etc that go along with it (and it is easier as they cook the potatoes in goose fat so would need to make someĀ separatelyĀ for me) I need more of a complete meal. Veggies/ vegans- what are you going to be eating this Christmas day? What do you normally do if you eat at someone else’s house?

Bondi Band Giveaway!

Hello all!

I promised a giveaway today and so here it is!

A while ago the lovely folks at Bondi band agreed to send me two of their sweat wicking sports hair bands. One for me to review and one for me to giveaway. They look brilliant as they will keep the hair out of my eyes (I normally have millions of hair clips and hairbands as I cannot stand even a strand in my face, and I have a lot of hair so it frequently gets in the way) and of course the sweat wicking fabric is so much better for exercise. I had so much fun choosing them- check out their site for many funny slogans. Anyway, the two I finally chose are here:

A black one that says “Just one more mile…” and a navy one with “Run <3 ” on it. Now they arrived while I was in hospital, so at the moment I have not tried either one out (and won’t get to in the near future either). So anyway I have decided that the winner will get to choose which band they like the most, and I will keep the other one to try out once I am better.

Gingerbread tea! And trying to get well soon…

Hey everyone

First up, yesterday I warmed myself up by having a lovely cup of gingerbread tea!

This was so delicious! It was from Jemma for Secret Santa, so thanks Jemma šŸ™‚ It reminded me of the loose cinnamon tea you used to be able to get from Whitards- spicy and gently sweet. It would make an amazing latte I think. I needed warming up as we attempted a walk- we only went out for 20 mins and that was enough for me (standing up straight is still quite hard and sometimes sore)- with the effort of the walking and the cold cold wind.

I also got a little surprise this week:

A card made by my class (how sweet- it is a stained glass style-they cut out the holes then covered in tissue paper- this is the style we did for the Christmas cards this year only they did a tree/star shape)- they all signed it too (made me quite tearful), and some lovely flowers from work.

I also feel rather strange as I keep on getting “Get Well Cards” through the post. I am not one used to being unwell, and I did not really feel like my situationĀ warrantedĀ the cards. Andy keeps telling me off- I suppose I was in hospital last week.

Today I found out that my “urgent” appointment is not until the end of January (and I think this is where they discuss the options and not when they would actually do the operation) which is annoying as I am getting annoyed at myself for not being well. It seems a long way away! That is a long time without running (I suppose the pain might keep getting less, but at the moment even walking is uncomfortable)- might have to cancel the Brighton Half marathon. Which I know is not the end of the world but you know this illness has already scuppered our holiday plans, made me miss 2 weeks of work and so I was hoping it would be sorted sooner rather than later. Moan over!

I am trying to find things that keep me occupied that involve sitting down! I can potter about a bit, but not for long (which is just ridiculous in my opinion but it is how it is). Ages ago I made some Christmas cakes (which can be made the day before so if you fancy having a go see my post here) so I decided to start decorating them this week. The Pink Whisk website has a brilliant how-to, so have a look there if you fancy having a go. I used the boards I got from Dunelm Mill which come with bakery-style white card boxes- perfect as they are gifts to go in little hampers for our parents.

On went the marzipan (stuck down with warm apricot jam- I did the top as a circle and then the edges as a long sausage shape which I then moulded together). This had to be left to set/ harden overnight as then the icing would stick better to it.

Then on went the icing. This was rolled out into a huge circle, draped over, smoothed on top and then smoothed around the side. All the extra bits were cut off and used for the next cake.

I have not decided on the decorations yet. I will do one as a parcel, as I loved learning how to make the bows. But I also saw the cute gingerbread man cake on the pink whisk which I am tempted to try, or a cute polar bear (snow-lar bear) cake. Who knows. Which one would you choose?

Veg box cooking

I got a veg box a while back, and have been working my way through the contents.

Onions, peppers and courgettes are what I eat most of anyway, plus pears and clementines are perfect for this time of year. It was the leeks and kale that I was not sure what to do with. I got a lot of suggestions for how to eat the kale- thanks to everyone for those. Online Colleges have culinary classes if you love cooking with veggies.

I tried to make kale chips to go along with chickpea stew. Well, I think I burnt them. The crunch was ok, but I was not keen on the cabbage-y flavour.

Then I tried to make some kale pesto. I love other pesto that I made, so I thought it would be good. In went a cup of soaked almonds, a couple of handfuls of kale, a roasted romano pepper (also from the box) and some herbs I think. Verdict? Cabbage flavoured. Not keen!

But I did have success with the leeks! I could not decide what to make (I did not really fancy soup), so I think I made some kind of frittata/ bake maybe?

I cooked the leeks in a tsp pure spread.

Then I whizzed up a block of tofu, some natural yoghurt (because I had some left but you could easily leave it out), some red pesto, some sundried tomatoes and a few bits of goats cheese. Then I added in the leeks and a little caramelised onion chutney.

Then I put the mixture into muffin tins (was not sure whether to use cases- I didn’t but think in the future I would as they were hard to get out) and topped with a little more goats cheese.

I baked them for maybe 30 mins at 200C I think.

Turned out pretty well for something made up!

I enjoyed one (for quality control of course) with sweet potato, rocket and hummus, and it was really tasty. The leeks had a nice mild flavour which went well with the sharper goats cheese and sweet caramelised onions. They had the texture of maybe anĀ omeletteĀ but without the eggy flavour (I don’t like eggy flavours!). I have frozen the other ones for a later date- I love a good freezer meal.

At least I know I do not like kale now- the flavour is too strong for me- I will stick to spinach/ rocket/ watercress etc for my greens! šŸ™‚

Anyone else not a kale fan? I see it on a lot of blogs so a lot of people must like it but I have realised it is not for me!

WIAW- lunch out

 

Happy WIAW everyone and thanks Jenn! I was sad to miss it last week, but had already taken the photos, so I am a week behind. Plus this week I have mainly been eating hospital food which I would rather not think about. So this week I am looking at Wednesday from 2 weeks ago, which here in the UK was a strike day for a lot of public sector workers. I did not go on strike, so it was a weird day at work as not many classes were in. My lunchtime meeting had been cancelled weeks ago, as the one who runs them was on a course, so as Andy normally works from home that day we arranged to go out for lunch- how the other half live!

So- breakfast:

Porridge with cranberry and blueberry compote. Ahem. Tasty!

Snacks– unpictured Clif z bar for morning break, and an apple mid-afternoon.

Lunch:

We were going to go to the local Starbucks, but as it was such a beautiful day Andy improvised and by the time he picked me up he had been to get us sandwiches and hot drinks. We went to the park in St Albans. (Photos from my phone so not sure how well they will come out as it is a 2 year old normal phone!).

Andy got for me a falafel and hummus wrap and a soya chai latte! He helps to feed my addiction! It was so sunny but fairly cold so I kept my coat on!

It was so lovely to be sat outside in the sunshine and just having a chat instead of tidying, marking, setting up for the afternoon etc. I love the red cups too!

Andy took a photo of the Abbey for me too- it just looked wonderful in the sunshine. I wish I could go out for lunch every day- I just felt so relaxed and unstressed all day.

When I got home I went on a run.

Dinner:

Sweet potato fries, rocket, hummus and a leek tofu bake thing. Recipe to follow at some point.

Dessert:

A gingerbread pumpkin loaf thing (based on the vegan pumpkin spice cake recipe). Yum.

Do you ever have lunch out? Do you get a lunch break? Officially we do, but in reality it is crammed with things to get done that you can’t do whilst teaching!

I am not complaining though as I do enjoy the job, and it does have some big positive points. Some people look into onlineĀ universities when they want to take culinary arts classes- sometimes I have a look at these (things like nutrition always interest me) as you could train while still working but I am never sure if I would have the time.
