Spiced nuts with cranberries and coconut, and smelling like Christmas

Hey all

As I am rather confined to home at the moment I have been passing a lot of the time watching the food network/ good food channel. I keep seeing loads of Christmas specials (although have not seen the comedy gold that is Fanny Craddock yet this year) and have been recreating a few recipes at home to add to our gift hampers. I saw a version of this recipe, but forgot to write it down/ record the programme/ and could not find it on the internet.

Anyway, on with the recipe:

Mix 3 cups raw almonds, 1 cup dried cranberries and 1/2 cup coconut in a bowl. Preheat the oven to 180C and line a tray with baking paper.

Then in a small pan gently heat 3 tbs butter (I used Pure spread so they are vegan also), 3 tbs light brown soft sugar, 3 tbs dark brown soft sugar and a squirt of maple syrup.

Let it bubble away for a few minutes, then add a drop of vanilla, a drop of orange extract, a tsp cinnamon and a tsp mixed spice.

Pour the mixture over the nuts and dried fruit, and mix mix mix. Mix until they are all coated in the mixture. It gets very sticky!

Pour it onto the baking tray and spread it out.

Bake for 15-20 mins until they have darkened slightly (but not burnt). Some of the sugars will have gone hard when you take it out. Then leave to cool on the tray for a little bit before breaking it up.

Bag it up ready for gifts, and of course keep some for yourself!

As well as giving gifts I was lucky enough to receive one this week- a few friends have popped over this week to keep me company, and one of them (who is the most amazing baker/ sweet maker) made me some salted caramels as a get well gift- in the prettiest bag too!

Seriously, how cute is this bag? Apparently it is for cupcakes but I think caramels are a much better filling!

I also ordered some rawr chocolate- they do Christmas chocolate with is flavoured with orange oil, cinnamon and nutmeg. Again- amazing- tastes like Christmas. šŸ™‚

The only smell that tops it is a gingerbread house. I have made the pieces but not yet stuck it all together/ decorated it yet. I love it so much when we have one for decoration because the smell just drifts through the house the entire time. Mmmm.

WIAW- getting better edition

Morning peeps

It just does not feel like a Wednesday here- not sure it feels like any day at the moment. Having no routine just means all the days merge. But hooray because thanks to Jenn it is time for the midweek party to celebrate/ be nosy about what everyone has for their food.

I think (because all the days merge) I chose last Monday, a couple of days after I got home from hospital. Sadly porridge is not agreeing with me right now- I should not have had it in the hospital as now it reminds me of that. Hmph. Hopefully in a few days I will be back to it. I also had a bit of a dodgy tum my last day in hospital so was wanting more crunchy foods. Plus I get really full really quickly at the moment, but then hungry soon after- think when my stomach gets full it might press on the cyst? Anyway, less rambling, more food pictures!

Breakfast:Ā 

Seedy toast with rainforest nut butter and blackcurrant spread.

Lunch:

Tomato soup (good old Heinz not home-made!) and some tomato and goats cheese flatbread. Ā Plus 2 clementines- so delicious.

Afternoon tea! My favourite!

Gingerbread spice tea! So yummy!

Dinner:

Pasta with red pesto, veggies and cheese (I did not manage all of this as I got so full though).

Dessert: A bit later on.

Baked apple with raisins and caramel alpro.

Do you have foods that remind you of being ill or foods that you feel make you feel better? For a long time, weirdly, tomato soup reminded me of being ill so I would never eat it when I was not unwell, but now it makes me feel like I am getting better. Ā I always feel that citrus fruit help me with a cold- a bit late with the vitamin C once you have the cold but it helps my brain believe I will get better- placebos are proven to work even when people know they are placebos after all!

Bondi Band Giveaway!

Hello all!

I promised a giveaway today and so here it is!

A while ago the lovely folks at Bondi band agreed to send me two of their sweat wicking sports hair bands. One for me to review and one for me to giveaway. They look brilliant as they will keep the hair out of my eyes (I normally have millions of hair clips and hairbands as I cannot stand even a strand in my face, and I have a lot of hair so it frequently gets in the way) and of course the sweat wicking fabric is so much better for exercise. I had so much fun choosing them- check out their site for many funny slogans. Anyway, the two I finally chose are here:

A black one that says “Just one more mile…” and a navy one with “Run <3 ” on it. Now they arrived while I was in hospital, so at the moment I have not tried either one out (and won’t get to in the near future either). So anyway I have decided that the winner will get to choose which band they like the most, and I will keep the other one to try out once I am better.

Gingerbread tea! And trying to get well soon…

Hey everyone

First up, yesterday I warmed myself up by having a lovely cup of gingerbread tea!

This was so delicious! It was from Jemma for Secret Santa, so thanks Jemma šŸ™‚ It reminded me of the loose cinnamon tea you used to be able to get from Whitards- spicy and gently sweet. It would make an amazing latte I think. I needed warming up as we attempted a walk- we only went out for 20 mins and that was enough for me (standing up straight is still quite hard and sometimes sore)- with the effort of the walking and the cold cold wind.

I also got a little surprise this week:

A card made by my class (how sweet- it is a stained glass style-they cut out the holes then covered in tissue paper- this is the style we did for the Christmas cards this year only they did a tree/star shape)- they all signed it too (made me quite tearful), and some lovely flowers from work.

I also feel rather strange as I keep on getting “Get Well Cards” through the post. I am not one used to being unwell, and I did not really feel like my situationĀ warrantedĀ the cards. Andy keeps telling me off- I suppose I was in hospital last week.

Today I found out that my “urgent” appointment is not until the end of January (and I think this is where they discuss the options and not when they would actually do the operation) which is annoying as I am getting annoyed at myself for not being well. It seems a long way away! That is a long time without running (I suppose the pain might keep getting less, but at the moment even walking is uncomfortable)- might have to cancel the Brighton Half marathon. Which I know is not the end of the world but you know this illness has already scuppered our holiday plans, made me miss 2 weeks of work and so I was hoping it would be sorted sooner rather than later. Moan over!

I am trying to find things that keep me occupied that involve sitting down! I can potter about a bit, but not for long (which is just ridiculous in my opinion but it is how it is). Ages ago I made some Christmas cakes (which can be made the day before so if you fancy having a go see my post here) so I decided to start decorating them this week. The Pink Whisk website has a brilliant how-to, so have a look there if you fancy having a go. I used the boards I got from Dunelm Mill which come with bakery-style white card boxes- perfect as they are gifts to go in little hampers for our parents.

On went the marzipan (stuck down with warm apricot jam- I did the top as a circle and then the edges as a long sausage shape which I then moulded together). This had to be left to set/ harden overnight as then the icing would stick better to it.

Then on went the icing. This was rolled out into a huge circle, draped over, smoothed on top and then smoothed around the side. All the extra bits were cut off and used for the next cake.

I have not decided on the decorations yet. I will do one as a parcel, as I loved learning how to make the bows. But I also saw the cute gingerbread man cake on the pink whisk which I am tempted to try, or a cute polar bear (snow-lar bear) cake. Who knows. Which one would you choose?

Veg box cooking

I got a veg box a while back, and have been working my way through the contents.

Onions, peppers and courgettes are what I eat most of anyway, plus pears and clementines are perfect for this time of year. It was the leeks and kale that I was not sure what to do with. I got a lot of suggestions for how to eat the kale- thanks to everyone for those. Online Colleges have culinary classes if you love cooking with veggies.

I tried to make kale chips to go along with chickpea stew. Well, I think I burnt them. The crunch was ok, but I was not keen on the cabbage-y flavour.

Then I tried to make some kale pesto. I love other pesto that I made, so I thought it would be good. In went a cup of soaked almonds, a couple of handfuls of kale, a roasted romano pepper (also from the box) and some herbs I think. Verdict? Cabbage flavoured. Not keen!

But I did have success with the leeks! I could not decide what to make (I did not really fancy soup), so I think I made some kind of frittata/ bake maybe?

I cooked the leeks in a tsp pure spread.

Then I whizzed up a block of tofu, some natural yoghurt (because I had some left but you could easily leave it out), some red pesto, some sundried tomatoes and a few bits of goats cheese. Then I added in the leeks and a little caramelised onion chutney.

Then I put the mixture into muffin tins (was not sure whether to use cases- I didn’t but think in the future I would as they were hard to get out) and topped with a little more goats cheese.

I baked them for maybe 30 mins at 200C I think.

Turned out pretty well for something made up!

I enjoyed one (for quality control of course) with sweet potato, rocket and hummus, and it was really tasty. The leeks had a nice mild flavour which went well with the sharper goats cheese and sweet caramelised onions. They had the texture of maybe anĀ omeletteĀ but without the eggy flavour (I don’t like eggy flavours!). I have frozen the other ones for a later date- I love a good freezer meal.

At least I know I do not like kale now- the flavour is too strong for me- I will stick to spinach/ rocket/ watercress etc for my greens! šŸ™‚

Anyone else not a kale fan? I see it on a lot of blogs so a lot of people must like it but I have realised it is not for me!
